How to trim Beef Tenderloin Roast??

  1. Preheat oven to 325 degrees F.

  4. Add grape seed oil to the pan.

Ingredients

  • 6-7 lb.未修剪的牛腰肉(或修剪3-4磅)

  • 1 head of garlic,切成两半
  • 1 bunch of fresh thyme (10-15 sprigs)
  • 3汤匙无盐黄油

  • 1/4 cup chopped fresh parsley

  • 2 tablespoons prepared horseradish

For Beef Tenderloin:

  1. Pull out beef tenderloin 1 hour before cooking.
  2. Preheat oven to 325 degrees F.

  4. Heat a large cast iron skillet to medium high heat.You want it searing hot!!
  5. Add grape seed oil to the skillet and immediately add prepared beef tenderloin.
  6. 每面煨2-3分钟,直到浅棕色。(you'll do this to all four sides)
  7. Then add butter,大蒜和新鲜百里香放在锅里。

  9. Place cast iron skillet in the preheated oven,uncovered.Roast beef tenderloin for 35-40 minutes.(Medium Rare 125 – 130 degrees F  | Medium 130 – 135 degrees F  | Medium Well 135 – 140 degrees F)
  10. Once it reaches your desired doneness.把锅从烤箱里拿出来,把里脊放在砧板上。让它休息10分钟,这样可以使果汁再循环。

鲜草皮:

  1. To a small bowl add fresh parsley,新鲜罗勒和新鲜百里香。Mix them together.
  2. Once tenderloin has rested for 10 minutes,你可以将腰部卷入新鲜药草中涂上外衣,也可以用手将新鲜药草压在腰部上。(I found the later to be easier)

辣根酱:
